I made chili
I don't always cook as much as I should. As I imagine happens to everyone, sometimes life, laziness, roommates, etc. can get in the way, so more often than I'd like to admit, we resort to bowls of cereal for dinner. It can be especially bad when we get home from the gym and just want to collapse onto the bed, but at least we can usually see that one coming and can (not necessarily do) prepare accordingly by tossing a few things in the crock pot to make a chili of sorts. I figured out how a few months ago when we made stuffed peppers and I determined the stuffing for those peppers was basically the chili I'm talking about and just making that on its own is easier than stuffing peppers with it.
The base ingredient (and a huge part of the reason it's so easy) is enchilada sauce. We use canned stuff usually, but I can only assume it would be better freshly made. We pretty much just line the crock pot, dump in a can of enchilada sauce, a can or two of beans, some rice and a cut up potato, stir in some chicken bouillon (or a veg alternative, as the case may be) and we're good to go. Adding some diced peppers and onions would no doubt raise the bar a notch or two, but I'm usually going for simplicity so I don't put much in. Sometimes I'll have a problem where some of the rice burns to the bottom, but I'm not overly concerned with it since I make sure to line the crock pot. Even so, I'm curious how I could prevent this.
This morning, I weighed: 178.6 lbs.
Yesterday, I ate:
~ Scrambled eggs
~ Two peanut butter cookies
~ Leftover pasta in tomato soup
~ Cheesy pasta
~ Garlic bread
On the other hand, if we haven't prepped for the gym, we might just end up going to taco bell assuming we have the money. Everyone makes bad decisions.
